I'm always looking for something new to cook for dinner while camping. On my last trip I gave this a try and it was fabulous - especially on a cool fall evening. So easy to make over the camp fire - no need for a stove for this meal!
Poke your potato (or my favorite - a sweet potato) several times all over with a fork. Smear your potato with butter, then double wrap in aluminum foil and bury it in hot coals. Cook for 30 to 60 minutes until soft.
